I’ll be serving pizza tonight with a loaded salad that is topped with a creamy homemade Parmesan herb salad dressing.

We love pizza night at our house. It gives me a chance to relax a bit on my cooking time for those really busy nights when I don’t have hours to spend coming up with something new to cook.

Tonight, pizza night means a sort of semi homemade night.

I love making home made salad dressings. They taste so much better than store bought and I know exactly what is going in them.

When I pair items together on my table, I want to make sure that they go really well together. It makes the whole meal taste better if you keep in mind the ingredients from one dish to another.

It’s Pizza Night at our house and I’m teaming it up with salad and the most amazing Parmesan Herb Salad Dressing!

When I was shopping and headed to the frozen food aisle to pick up a pizza for an easy dinner tonight. Artisan Crust pizzas are a type that I love to get when eating out, so it went into the shopping cart.

This pizza uses 100% mozzarella and provolone cheeses, tomatoes and roasted garlic and has a Parmesan herb seasoning.

Since I planned to serve a salad to go along with the pizza, I just knew that the dressing for my salad would have to match the herb seasoning on the pizza!

I grow fresh herbs on my deck pretty much year round so I had just what I needed for the herb seasoning part of this dressing – fresh oregano, basil, and parsley.

I cut a bunch of each and gathered the rest of the items that I would need to make the salad dressing.

As luck would have it I also have some baby lettuce growing outside too. I wanted this salad to be a bit nicer than a normal tossed salad.

I chose Campari tomatoes, baby bella mushrooms, avocado, feta cheese, and freshly cooked edamame beans.

If you have not tried edamame beans in a salad, you don’t know what you are missing.

The ones I bought were frozen and just needed a few minutes in the microwave to heat. They also make a super snack, so have some extras.

They are really yummy and very good for you!

While the pizza was cooking, I made both my salad dressing and assembled the salad so that everything would be done at the same time.

I just love knowing that this meal is going to be about 20 minutes from start to finish!

The pizza has the most amazing taste. The crust has a subtle sweetness to it and a very hearty, grain like texture.

Ingredients

For the dressing

  • 1/4 cup of sour cream
  • 2 tbsp Mayonnaise
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 2 tbsp fresh parsley
  • 2 tbsp fresh oregano
  • 2 tbsp fresh basil
  • juice of one lime
  • 1/2 cup Parmegiano Reggiano cheese
  • 1/4 cup water (to get the right consistency to pour)

For the salad:

  • Fresh baby salad greens
  • Sliced avocados
  • Campari tomatoes
  • Baby Bella Mushrooms
  • Cooked Edamame beans
  • Feta Cheese
  • Croutons
  • For the Pizza:
  • 1 Freschetta® Artisan Crust Margherita Pizza

Instructions

  • Finely chop the fresh herbs. Combine all of the spices and seasonings together in a jar .
  • Add the sour cream, mayo, Dijon mustard, lime juice, and balsamic vinegar together.
  • Add water, if needed, to get the right pouring consistency.
  • Grate the Parmegiano Reggiano cheese and mix well. Shake until well combined.
  • Combine your salad ingredients in a serving dish. Pour over the dressing and mix well.
  • Refrigerate the remaining dressing.
