So I have a very special recipe today–Tahini & Miso Cauliflower Steaks from my lovely friend, blogger, food writer & stylist Natalie’s new cookbook–The Goodness of Nuts & Seeds–which she has kindly given me two copies of to run a little competition.

I love new cookbooks and trying out the recipes, especially if someone has lovingly created them like this one.

I made Natalie’s Tahini & Miso Cauliflower Steaks and loved it, really simple to make and I absolutely adore roast cauliflower so I’m always looking for new recipes!

The dressing is delicious; miso, rice wine vinegar and tahini. And I love Natalie has also roasted the other leaves of the cauliflower–a recent discovery and I’m hooked!

About the book;
The book contains so many delicious selections of recipes all centred about nuts and seeds.
Natalie would love to change the way we look at the humble nut and seed smart, easy and flavour-packed recipes for everyday cooking for good… how to introduce these nutrient-rich heroes with minimum fuss.
Natalie believes we need to reassess the way we consume nuts and seeds at home and encourages us to celebrate their versatility, using them as the basis for as many of our everyday meals as possible.

Nuts & seeds are nutritional powerhouses and help maintain a healthy heart, support your immune system, give you glowing skin and keep your brain in good condition. And the taste is amazing!

Not only did Natalie beautifully style & photograph the recipes, they also sound delicious.

Recipes I really like;
Raw Peach Melba cheesecake, Chia, Raspberry & Coconut slice, Cashew, Olive & Seed Tapenade and of course the Tahini & Miso Cauliflower Steaks.
Things to note;
The book IS NOT plant based, but the focus is on nuts & seeds which are of course nutritional power houses and perfect when you’re a vegan or vegetarian.

Gorgeous cauliflower steaks with an incredible miso, rice wine vinegar, and tahini dressing - simple and absolutely delicious.

Ingredients

  • 1 large cauliflower head sliced into steaks (inner leaves separated and outer leaves discarded)
  • 1 tablespoon rapeseed or olive oil plus extra
  • 1 garlic clove crushed
  • 1 tablespoon white miso paste
  • 1 tablespoon tahini paste
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon black or white sesame seeds
  • A handful of fresh mint leaves roughly chopped
  • Salt and pepper

Instructions

  • Preheat the oven to 200°C/gas Mark 6.

  • Place the cauliflower and leaves, spaced apart, on a roasting tray (you may need two).

  • In a bowl, mix the oil, garlic, miso paste, tahini paste, rice vinegar and some seasoning, then use a pastry brush to generously coat the cauliflower until evenly covered.

  • Drizzle generously with some extra oil.

  • Roast for 20 minutes, or until the cauliflower is tender, golden and the leaves are crisp.

  • Remove from the oven and allow to cool slightly.

  • Before serving, sprinkle over.

  3. Niki! Sounds and looks delicious, loving the ingredients list. Roasted cauli is a huge favourite here at home but I’ve never taken it as far as brushing them with a thick sauce like you are here (more a ‘drizzle stuff on top and how for the best style) –must try 🙂

Well, if there is something that gives a divine taste to most of the meals I cook, for sure those are nuts and seeds..two addictions of mine and my family that can not be replaced..because once you discover something good, you keep it for life..and they keep us alive..a book ‘dedicated’ to nuts and seeds it’s THE book that I would be honored to ‘devour’..!

  11. I have had my eye on this book since the build up on Instagram. Living in Kenya I have an abundance of fresh produce available, this includes nuts and seeds. I would love to learn new ways of using them in my cooking. As specialists cook books are near impossible to buy here it would be a little bit marvelous to win a copy!   12. I would love to win this book! I really enjoy nuts and seeds but often don’t do anything more exciting with them than a little sprinkle on top of a meal! So would love to be inspired with new ways to incorporate them into recipes. This dish looks delicious – I still haven’t got round to doing a cauliflower steak but must add this to the list. Vx

  16. Nuts & Seeds! I can’t go a day without them in my diet so finding new ways to include them within meals is always welcomed. This group of foods is so versatile and incredibly nourishing I’m not surprised Natalie found ways to fill a book with them! I’m intrigued to know what’s inside!
